A Little Bit of Pickle Pleasure for your New Year's

Ring in 2012 with good friends and in a pickle's splendiferous new attitude to some old favorites that includes our sweet & spicy pickle peppers!

Add luck to your year with a few lucky peas... raw black-eyed peas make a beautiful accent to any champagne glass... we put a few in the bottom of the glass and then pour a bit of the bubbly in for the first toast of the New Year!  We DON'T recommend adding these to your glass at the end of the night... 

Something you will want to try is our version of Black-eyed Pea Chowder... yummy!  AND to go with that chowder you may want to add some in a pickle pepper Focaccia.  Another fun idea is a twist on your favorite bloody Mary mix... Try ours with sweet & spicy pickle peppers.

Black-eyed Pea Chowder
1/2 lb bacon, diced
2 cups celery, chopped
2 cups in a pickle sweet & spicy pickle peppers, chopped
2 cups onion, chopped
1 (10 1/2 oz) can beef consomme
2 (16 oz) cans diced tomatoes
2 (16 oz) cans black-eyed peas

Saute bacon with celery, peppers and onion.  Add consomme, tomatoes and peas; slimmer 30 to 40 minutes.  Makes 6 to 8 servings.


in a pickle Pepper Focaccia
1 pkg. refrigerated pizza crust
1/4 cup Italian salad dressing
2 garlic cloves, pressed
1 cup shredded mozzarella cheese, divided
1/2 cup in a pickle sweet & spicy pickle peppers, patted dry and chopped
1/2 cup sliced pitted ripe olives
1/4 cup grated fresh Parmesan cheese
1/2 tsp Italian seasoning


Preheat oven to 400 degrees.  Unroll pizza crust lengthwise on lightly greased jelly roll pan.  Press indentations 1/2 apart into surface of dough.  In small bowl mix salad dressing and garlic; brush over dough.  Sprinkle with half of the mozzarella cheese.  Top with peppers and olives.  Sprinkle with remaining mozzarella cheese, Parmesan cheese and seasoning.  Makes 8 servings.



in a pickle bloody Mary mix
1 TBLS granulated garlic
1 TBLS finely ground black pepper
1 TBLS kosher salt
3 green onions, chopped
1/2 cup sweet & spicy pickle peppers, chopped
46 ounces V8 juice
2 TBLS siracha sauce or Asian garlic chili sauce

Puree all ingredients in a blender.  Use in your favorite bloody Mary recipe or just serve over ice  and garnish with a sweet & spicy pickle!

Holidays, HoliDAZE

We are in a pickle holiDAZE as we count down for Christmas ... sales are topping all time highs, pickle peeps continue to shop and we continue to prepare and stock our pantry with seasonal and sweet and spicy delights!

The holiday season brings fond memories for us of family, friends and good foods.  That's why we try and bring you products that will help make a memory or bring back a wonderful recollection of a holiday passed.  Here are a few recipes... not any that are out of the ordinary but we think you'll find, like we have, that when you add an in a pickle product to an ordinary recipe... sometimes you'll find extraordinary!  

We hope you find that special memory in our products... we are so thankful for all of our customers and those we fondly call "pickle peeps"
Merry Christmas from our home to yours...

Sweet & Spicy Tomato Jam Lamb
12 small rib lamb chops
1/3 cup extra-virgin olive oil
sea salt 
1-2 cloves garlic (smashed)
2 tbsp. fresh mint leaves (chopped finely)


Preheat grill.  Mix olive oil, 1 tbsp. of mint, and salt to taste in a bowl.  Rub the chops with garlic.  Brush the chops with the oil mixture.
Grill the chops until charred, 3 to 4 minutes per side (the middle of the chop should be slightly firm)  Transfer to a platter and brush with in a pickle Sweet & Spicy Tomato Jam, sprinkle with remaining mint leaves.
Serves 6.


Holiday Brie En Croute
1/2 pkg (17.3 oz. size) Frozen Puff Pastry Sheets (1 sheet)
1 egg
1 tbsp. water
1/2 cup of in a pickle Lemon Marmalade
1/3 cup dried cherries, softened
1/4 cup toasted sliced almonds
1 Brie cheese round
Water crackers


Thaw pastry sheet.  Preheat oven to 400F.  Mix egg and water and set aside.  On lightly floured surface unfold pastry sheet and roll into 14 " square.  Cut off corners of the square to make a circle.  Spread the in a pickle Lemon Marmalade to within one inch of the pastry edge.  Sprinkle cherries and almonds over the marmalade and top with cheese.  Fold these two sides onto the round.  Press edges to seal.  Place seam-side down on a baking sheet.  Brush with egg mixture and bake 20 minutes or until golden.  Let stand for 1 hour and serve with crackers.  Serves 12.

3rd Annual Art for a Cause - in a pickle Will Be There!

   It's not often that we allow ourselves to get warm and fuzzy but this Fort Worth event hosted by local brewery Rahr and Sons is definitely on the top of our warm and fuzzy list!




Support Art for a Cause








   It's the third year that the brewery has hosted Art for a Cause, an event that provides holiday shoppers an outlet to buy handmade gifts from local artists and contribute to great charities at the same time!  (Last year the event raised about $3,000 for the three charities sponsored.)  The three charities that will receive 20 percent of sales this year are the Humane Society of North Texas, Meals on Wheels of Tarrant County, and The Warm Place, a grief support center for children and their families.  Rahr and Sons will host this event on Wednesday, December 14 from 5pm until 9pm.


   We want all of our pickle peeps to come out and make a difference!

A Splendiferous Foodie Weekend Ahead

We are gearing up for a Fancy Food Truck Foodie weekend! 

The in a pickle foods Fancy Food Truck will be on the road in Old Downtown Carrollton on Saturday at Christmas on the Square   from 10am until 5pm and on Sunday at the Fort Worth Food Park right behind Target at Montgomery Plaza and West 7th Street from noon until 8:30pm.


We hope to showcase many in a pickle gourmet specialties when on the road ... and YES!  James' will be a cookin' this weekend!  And straight from the Bayou... our menu will include:


Chicken sausage gumbo
red beans and rice
cornbread
inapickle bread pudding 
inapickle banana pudding

Happy Thanksgiving!

     We are settling in for a great Thanksgiving here at in a pickle foods!  James may throw on a Kahlua Turkey (that's a young turkey rubbed down with sea salt and pepper and slathered with Kahlua every 30 minutes until done) and there may be pumpkin pie or pecan pie... but one thing we know for sure the boys (Angus and Mac) will be with us AND we are sure to celebrate with friends and family.
     If you need a festive Thanksgiving appetizer to make and take try our 

in a pickle NUTTY CHEESE BALL ... 

1/4 cup softened reduced fat cream cheese (Neufchatel)
16 oz. shredded sharp cheddar cheese
3 TBL low fat mayo
3 TBL in a pickle Original, chopped
1 TBL in a pickle Original, brine
1 TBL in a pickle Original, peppers
pinch of sea salt
pinch of pepper
1 1/2 cups pecans, toasted and finely chopped

Toast pecan halves at 350 degrees, stirring once for  7 - 9 minutes let cool and chop

Process cream cheese, add cheddar cheese and all other ingredients into bow, mix well, cover and chill for 30 minutes.  Roll mixture into 1 inch balls and cover with chopped pecans.  


Splendiferous!

Orange Gonna Try Our New Seasonal Jams???

We're just not your typical green... There's a lot of orange here at in a pickle foods!  Our seasonal jams just got better with our Tipsy Orange Cranberry jam and Orangey Fig jam.  You can't go wrong with Grand Marnier liqueur and Black Mission Figs!  That's how we spell Yummy!  Other new delights:  Apple Bourbon Cinnamon; Lemony Pear Vanilla Bean; Spiked Pear Chocolate; Sweet and Spicy Tomato Jam; Wild Citrus Grape.

We've made it easier for our pickle peeps to give the gift of flavor this holiday season.  Whether it's a tasty seasonal jam or our Original sweet and spicy pickles you can't beat a tasty treat for that special, unique gift.

Devilish In A Pickle Spicy Eggs And Other Holiday Treats

     The holidays were meant for fun, and easy to prepare dishes like our Devilish in a pickle Spicy Eggs for Halloween entertaining or what a bout Worms in Dirt ... that one we have to give the credit to diva Martha Stewart!  Whether you are preparing to host ghosts and goblins or you're looking ahead to Thanksgiving our spicy eggs are always a hit!  And for Halloween you can't go wrong with the worms (cue a devilish chuckle here)!


8 large eggs
1/4 cup mayonnaise
1 TBL Dijon mustard
1 TBL in a pickle Original juice
2 TBL chopped in a pickle Originals
2 TBL chopped pimentos
Parsley to garnish

Place eggs in a large pot, cover eggs with water and bring to a boil. Set a timer for 8 minutes. After 8 minutes, drain and run cool water over the eggs. Let cool; peel and cut in half lengthwise.


Next, Remove yolks and place in a mixing bowl; using a fork mash with mayonnaise, mustard, and pickle juice. Stir in chopped pickles and pimentos.

Spoon egg mixture into egg halves, garnish with parsley and paprika.

Worms In Dirt
8 hot dogs, sliced lengthwise into 1/2 inch thick strips
2 (15-ounce) cans black beans, drained and chopped


Bring a large pot of water to a boil over high heat and reduce to simmer; add hot dogs and simmer until they begin to curl; drain.
Place the chopped beans in a serving bowl and tuck the hot dogs in and out of the beans...
Goblins will LOVE this!

in a pickle Fall Southern Comforts

When southerners think about comfort, a lot of time food comes to mind... We at  
in a pickle foods have some favorites to share this fall...

Mama's Fav Biscuits with a dab of butter and in a pickle's Apple Bourbon Cinnamon jam AND Karen's Grilled Crostini... These two favorites are absolutely incredible,  perfect for a morning delight or an evening appetizer.

Mama's Fav Biscuits
Mix...
1 cup flour
1 tsp. salt
2 tsp. baking powder
1/4 tsp. baking soda
Cut in...
3 TBLS Crisco
Add...
3/4 cups of buttermilk
Stir well, and roll out cutting with biscuit cutter.  Place biscuits in well oiled pan, add a pat of butter on top of each biscuit.  Bake at 450 degrees for 10 minutes.
Serve hot biscuits with in a pickle's Apple Bourbon Cinnamon jam!


Karen's Grilled Crostini
1 baguette sliced thin (about 60 pieces)
3/4 cup of olive oil
sea salt and ground pepper
in a pickle's Lemony Pear Vanilla Bean jam
Chevre Cheese (Goat Cheese)


Preheat oven to 350 degrees. Slather oil on both sides of sliced baguette pieces, seasoning with both salt and pepper.  Bake about 15-20 minutes or until golden brown, flipping each slice about half way through.  Cool and add a dab of in a pickle's Lemony Pear Vanilla Bean jam with a few sprinkles of cheese!

Bon appetit!... in a pickle style!

We're In A Pickle For You

We're in a pickle about YOU our pickle peeps!  We are always thinking about our pickle peeps: what you like; what would be a home run taste sensation for your pickle palate; how we can make your food experience better.

With service on our mind, we are introducing two more delightful, splendiferous, seasonal jams...Apple Bourbon Cinnamon Jam and Tipsy Cranberry Orange Jam... YUMMY!  These sassy new jams will make their debut at the Grand Prairie Farmer's Market in downtown Grand Prairie on West Main Street this Saturday from 8am until 1pm.

We're also looking forward to November when we estimate in a pickle foods' fancy food trailer will be rockin' and a rollin' in Fort Worth at the new Food Trailer Park.  The park is planned for a lot that is west of downtown at the 2500th block of Weisenberger Street north of the Montgomery Plaza shopping and residential area behind Target.  Look for us there soon, we'll be serving up some in a pickle splendiferous delights!

Hanging with BIG TEX

We’ve been hanging with BIG TEX out at the The State Fair of Texas letting all of our pickle peeps and those that are new to the in a pickle experience sample our sweet and spicy Original pickles.

It's the 125th anniversary of The State Fair of Texas and there's lots going on out there!  in a pickle sampled at the fair last week and will be there this Saturday as well. Drop by and say "Hey"... we are in the Food and Fiber pavilion from 10am until noon!

If you can’t make the sampling you can always head out to White Rock Market where you can get our Original pickles and a host of our seasonal products like our newbie ..a splendiferious little ditty we named  
Spiked Pear Chocolate Jam
we mixed a little Kaluha, a little Godiva Chocolate,  to some scrumptious pears  and came up with a winner! Yeah!  That's what we are talking about... it's incredible!


Over the last few weeks we've been fussing over our sweet and spicy food trailer and hope to have some trailer stops in the near future.  Let us know what in a pickle delights you would like to see in the in a pickle food gourmet trailer … as our pickle peeps already know… we are all about great food, great flavors and happy customers!

James has also been working on our newest venture into catering.  Jame’s figures if in a pickle is cooking then why not share the love… the whole bird … the experience.  So if anyone is looking for an in a pickle whole bird experience for the holidays we’re the ones to call…fried, or roasted the in a pickle way!

Fall is in the Air

Wow!  It's hard to believe that we will officially be entering the fall season this week.  The fall equinox is on September 23rd and although we've experienced a respite from the intense hot weather here in Texas... cool weather remains to be seen, our high temps are still in the 80s and sometimes 90s!  But the weather doesn't stop in a pickle foods... nope we are out and about sharing our seasonal products and sweet and spicy gems.


We just completed the Dallas Gourmet Market where we met some new pickle peeps like Danette from Danette's Urban Oasis in Fort Worth, she is carrying our products and if you are out west in Weatherford stop by the Marketfest on Saturday's from 8 am until 1 pm.  It's held at Clearfork Station located in Willow Park off of I-20..  Stop by and tell them we sent you...  

We will also be east of Fort Worth at the White Rock Local Market on Saturday, loads of fun out there this weekend...it's dog adoption day AND the Market is hosting Food Trucks like Yum Yum Truck, Trailer Cakes and Ssahm BBQ.  

Nope, we won't be selling out of our Fancy Gourmet Food Trailer... just YET ... BUT you can catch us in our spot selling some yummy jams like our Peach Cinnamon, Strawberry Vanilla, Tomato, Wild Grape and... PEACH CHOCOLATE and of course pickle peeps we'll have our Original sweet and spicy pickles and our Bread & Butter Pickles.

TOMATO JAM and other Seasonal Delights

One of our seasonal delights this year has been Tomato Jam.  

Karen's had such a great time perfecting old recipes and coming up with some new ones... there's not much we can say about our Peach Chocolate Jam except... OMG!  It's always nice to have a little bit of heaven on a biscuit or a cracker or a bagel!   



AND Karen was tempted... so.... tempted with the last batch of juicy strawberries that she went right to work on Strawberry Vanilla Jam ... she'll have it this weekend in Grand Prairie! 
 



But you would really be in a pickle if you didn't try an adult PB&J. And of course it's not just ANY PB&J that's our seasonal small batch of Wild Grape Citrus Jelly, a chunk of crunchy peanut butter all between two slices of bread... you'll think you are a kid again!





Now... for the TOMATO JAM ... Try it on a grilled burger, douse it on a bagel with cream cheese, stuff a tartlet with it, add a sprinkle of Feta and top it with walnut sprinkles...that's how we spell YUMMY!  We also suggest adding it to your favorite grilled cheese sandwich... you won't be disappointed.  .... AND DRUM ROLL PLEASE!!!!

James is a cookin' Karen's Perfect Pita!

James loves to cook and lately he can't get enough of in a pickle's tomato jam!  



Here's a little ditty from Karen's original recipes that James likes to "whup up" ...

KAREN'S PERFECT PITA  or TACO TERRIFIC

1-2 lbs lean ground round beef
unleavened bread (pita or even a tortilla will work)
salt,
pepper,
cinnamon,
in a pickle's tomato jam,
in a pickle's original pickles,

Throw the meat in a skillet, doctor it with salt and pepper to taste... add enough cinnamon to lightly cover the meat and stir that baby up right.  Then add a couple of tablespoons of in a pickle's tomato jam and Original pickles... stir again.  Let this stove top mixture brown and settle... pour the mixture on top of a pita or in a tortilla ... roll that baby up ... and you've got a Taco Terrific or Perfect Pita .... enjoy!

A Food Truck Park in Fort Worth... Woo Hoo

Wow!  Is it time or is it time???  Fort Worth... trendy... GOOD FOOD... all in the same breath! Cowtown's gonna be cookin'!  It's about time!!!  Austin has 'em, San Antonio has 'em, Portland has 'em ... and Dallas is getting one!  If you haven't heard there's plans for a FOOD TRUCK PARK in Fort Worth.... UMMMM and let's see who just got a fancy food truck that's shiny and red and ready to roll.... YEP in a pickle!   (check out our You Tube channel for more in a pickle truck shots)

With a food truck and Karen's culinary imagination ... pickle peeps WATCH OUT... there's no telling what she will come up with... her seasonal jams have jumped from our hands to yours and let's just say the Lemon Fig Preserves were almost as hot as our temperatures here in the Dallas-Fort Worth area!

AND NOW thanks to Chris Kruger a local attorney and entrepreneur, the Fort Worth Food Park will make a splash sometime (he's hoping) in the fall on a vacant lot in the 2500 block of Weisenberger Street north of the Montgomery Plaza shopping and residential area.   There will be room for 7 to 8 Food Truck/Trailers and parking across the street.  Foodie's should be able to walk from the 7th street area to the park and have a noshing good time!  Woo Hoo!

Headed to the Hatch Chile Festival

The Hatch Chile... you know the one from New Mexico... the one that the BBC World News voted the "Worlds Best Chile Pepper" yep, that one... well this Saturday the 20th of August marks Grand Prairie's Hatch Chile Festival and Art Walk from 8am until 4pm AND we'll be there!  

The event will be in the downtown area where Hatch Chiles will be sold, along with other goodies from local vendors, and there will be chef's presentations and an art walk to boot.. (no pun intended:).  

Karen's been a dreamin' and cookin' and the jams keep comin'!  Yummy!  And for those pickle peeps that come out and say, "Howdy" well, it will be well worth your time.
Look for in a pickle's NEW seasonal jams... like drum-roll puleese!!!!...

Blackberry Mojito,

Mango Lime.

Where else could you get splendiferous products like this and kick up a stir with some one and only Hatch Chilies???... PLUS rumor has it that the City of Grand Prairie has ordered 4,000 pounds of Hatch Chiles.  They learned their lesson last year when they sold out of a little over 1,300 pounds in under three hours!  Everything gets underway at 8am... see you there!

It's Christmas in August!

Okay... we knew that would get your attention pickle peeps!  Although we are wishing for a little Christmas weather here in Fort Worth, Texas... (the triple digit days hit 40 this week) that is NOT the reason for the announcement.  Nope, we're just giving all our friends a HEAD'S UP on shopping for your splendiferous edible Christmas gifts!

Plan ahead and order your pickles and jams today!  Yep, we're not joking... because we make our products in small batches we want to be sure and have your order ready ... so plan ahead.  Worried about it being too hot and too early to have your jams and pickles ready for the season?  No worries here, in a pickle products have a shelf-life of one year ... all you need to do is store in a cool, dry area... now of course our Texas friends are laughing at this point and saying "You've gotta be kidding me... cool???"  Well, that's right... cool, that means in any cool, dark area ,,, probably a good idea inside an air conditioned home this time of year!

There's plenty to do to prepare the kitchen for all of the gourmet treats Karen has in store... there's cleaning and prepping and a general overall inspection.



We will soon be ready to roll and provide all our pickle peeps with some really scrumptious fancy foods... here's a few shots of our newest seasonal products like lemon fig preserves...peach cinnamon jam and blueberry lime jam...

Random pickle facts!

America was named after a pickle peddler – Amerigo Vespucci was a ships chandler who outfitted his ships full of vitamin C-rich pickles to prevent scurvy among crew members!

Boy!  It's hot here in Texas and that makes us think about a hot game that kicked off the Dallas Cowboys' 2000 season when the 'Boys played the Philadelphia Phillys... hot... how about 109 degrees?  Several Cowboys dropped out of the game with muscle aches... the Phillys?  Well they stayed in the game and eventually won  41-14... their secret to fight off cramps:  pickle juice!  You can read more about the incredible pickle juice win after Kevin C. Miller a doctoral student at the time wrote a little something on it for his dissertation.

Touring with in a pickle!
















Hey pickle peeps just back from the southern in a pickle tour … we dropped by Baton Rouge and picked up some yummy figs… toured through Mississippi and Alabama and stopped for a few in South Beach, Florida.

While in Florida we picked up our pickle mobile! Yep, that's right… our positively, no doubt about it!… can't miss it!… don't want to miss it! RED in a pickle gourmet kitchen!



Spread the word, tell your friends, shout it out… it's a splendiferous thing! So what does that mean for our pickle peeps??? Can you say …sweet and sassy delights! How do you spell it?

It's such a milestone for us. A year ago, we were just starting out … our Original pickle had made its debut and look at us now:


A Fancy Foods Kitchen to bring all our fans more in a pickle delights! You may have tasted our limited Pimento Cheese… or had a taste of our seasonal line of jams & jellies like Lime Blueberry, Peach Cinnamon and new this past weekend… drum roll please… Lemon and Fig Preserves.





Thanks to all of you who dropped by to see us at the Dallas' White Rock Local Market or Celebration Farmers Market… you can usually catch us there... But even more important thanks to all of you who have supported us this last year. James' is a cookin'

It’s summertime and when the temps rise James gets to cookin’ and grillin’ and letting the burger’s smoke!



Here’s James’ Smokey Hot Turkey Burger recipe that will have you licking your lips and crowing for more! Do turkey’s crow? Ummmm…


James’ Smokey Hot Turkey Burger


2 lbs. ground turkey


6 jalapeno peppers, chopped


Add a little garlic powder, a little onion powder, pinch of red pepper flakes, two shakes of salt, two shakes of black pepper and throw in anything else in the cabinet you like…


Mix it all together, pat out some patties and throw it on the smoker… don’t have a smoker???… GRILL ‘EM!


No flips just wait to those babies are not crowing (do turkey’s crow?)


Slap on a toasted bun… with mustard and mayo…add a slice of a home-grown tomato, a few of our Original pickles… onion if you dare…. And you gotta burger to beat the best!


AHHHH…. Summertime at in a pickle.

in a pickle pimento cheese

Yummy... Yummy... in a pickle has got its pimento cheese on... yeah!

Made a batch last week for the good folks that patron the Prestonwood Polo and Country Club in Oakpoint, Texas.  It was the USPA intro-circuit 12 Goal tournament:  a weekend of world class polo!


We ponied right up with our in a pickle pimento cheese and had a great day of polo and pimento!  That's a shout out to all of our polo pickle peeps!


And just to let everyone know in the Dallas-Fort Worth area... we've got a bit of our special pimento cheese left.  Get it now... because this is a special edition and you won't see it again until we come out with our completed line of in a pickle pimento cheese.  When you might ask?  Well, James thinks it won't be too long... we'll let our blog readers know first!


In the mean time you can catch us this Saturday in Dallas at the Deep Ellum Outdoor Market and on Sunday at the Uptown Trolly Stop Market.


And a hoot... hoot to the NBA champion Dallas Mavericks!!!  The Miami Heat (who were in a pickle) may want to try our pickles to perk 'em up!!!

Pickle Peeps CALL TO ACTION

Okay all you pickle peeps!  We are now officially on YouTube and we need your help!!!! 

Please go to our inapicklepeeps YouTube channel and vote for your favorite YouTube in a pickle video.  The students at Karen's alma mater produced these videos for us and we think they are pretty clever!  Pick the one you like the best and leave us a message, vote, tell your friends.  These kids did this for a marketing project and we plan to give the top three video teams prizes... in a pickle on You Tube!


in a pickle is about to go viral!   

Beginning at the end of this month all our pickle peeps and the whole world will be able to watch in a pickle vignettes on You Tube!

We have partnered with Fort Worth’s Arlington Heights High School (Karen’s alma mater) to present in a pickle like you have never seen before.

There are pickles in a group, animated pickles, pickles under, over, and at the end of the rainbow, pickle surprises and of course everything that constitutes in a pickle.

These creative marketing students at Arlington Heights High School have taken in a pickle to a new level… we will let you know when you can view their work later this month on You Tube!
